One Thing that makes everyone Surrender: Food

FOOOOOD!!!No doubt,it obviously makes you drool.This 4 letter word has a lot going on and has experienced many changes with time.It is the base of our survival.Well,its not only about survival but also a plate of mixed emotions.Food expresses your emotions,it expresses your style,it expresses who you are.Every ingerdient you add in a dish is a part of you and your culture.Though it may seem a small word,it has a vast meaning.I just really nostalgic when I eat my grandma’s food as it brings back timeless memories.I am sure you all feel that and always wait for your vacation to go and relish her food.
Let me begin by telling the definition of food as per the Oxford dictionary-Any nutritious substance that people or animals eat or drink or that plants absorb in order to maintain life and growth.I definitely feel that its something more than that.Different countries have diffrent cuisines each expressing their own sense of style.Food has evolved a lot over the century.If you take the early man and the food he consumed,you will all know that he ate only raw meat.He did that for survival,bt now i don’t think I am gonna be doin that.I do rather stick to my mom’s or grandma’s food,the one that’s well cooked.

Wow,Indian cuisine being in the fourth position!!Now that’s nice.I have always been a huge fan of Indian cuisine,my country’s cuisine.Now not that I don’t fancy other cuisines of the world,my personal favourites other than Indian cuisine are Chinese and Italian.
Let’s move on to the serious facts now,Have you ever wondered why there is much ado all over about food?From mothers all over the world complaining about their kids not eating well to kids complaining that their mommys don’t cook well.Food is essential for our survival.The human body needs the necessary nutrients to sustain and to remain healthy.The nutrients needed buy the body are carbohydrates,proteins,fats,vitamins and minerals. Given below are the functions of each nutrient and their sources.
Carbohydrates:Molecules consist of carbon, hydrogen and oxygen atoms. A major food source and a key form of energy for most organisms. When combined together to form polymers, carbohydrates can function as long term food storage molecules, as protective membranes for organisms and cells, and as the main structural support for plants and constituents of many cells and their contents.The major source of carbohydrates are potatoes,rice,wheat etc.
Proteins:Molecules contain nitrogen, carbon, hydrogen and oxygen. They act as biological catalysts (enzymes), form structural parts of organisms, participate in cell signal and recognition factors, and act as molecules of immunity. Proteins can also be a source of fuel.Eggs,fish,meat,pulses etc are all good sources of protein.
 Fats:Molecules consist of carbon, hydrogen, and oxygen atoms. The main constituents of all membranes in all cells (cell walls), food storage molecules, intermediaries in signaling pathways, Vitamins A, D, E and K, cholesterol.Vegetable and animal oils are all good good sources of fats.
Vitamins and Minerals:They boost the immune system, support normal growth and development, and help cells and organs do their jobs. For example, you’ve probably heard that carrots are good for your eyes. It’s true! Carrots are full of substances called carotenoids that your body converts into vitamin A, which helps prevent eye problems.All fruits and vegetables are good sources of vitamins and minerals.
It is essential that we supply our body with all the above mentioned nutrients.Deficiency in any of these leads to major consequences and can prove fatal.Kids do make a lot of fuss to eat fruits and vegetables but its upto the parents to make them do it in a gentle way.
Food is classified into the following categories.
Convenience food:It is frozen,dried or canned food that can be heated and prepared very easily and quickly.Majority of the nutrients are lost in this as it involves a lot of processing.If frozen food is not stored properly,it may also lead to salmonella poisoning.
Health food:They are natural foods without artificial ingredients.Now with the ‘Lean is in’ concept,many people opt for this food as it keeps them fit and healthy.
Fast food(junk):It is hot food such

as hamburgers and chips,that you obtain from particular types of restaurant,and which is served quickly after you order it.Eating this in excess leads to obesity.
Wholefood:They are foods which have not been processes much and which do not have any artificial ingerdients added.They are similar to health foods.
Now once you all have digested these serious facts,lets keep them aside for a while and get on with the emotional part of food.But do not forget all these just cause I asked you to keep them aside.Food symbolises different aspects in different traditions.But there is one universal emotion which it never fails to convey-Love.Every person expresses his/her love through food.Whenever you are expecting someone at your place,be it your relatives,friends or colleagues,the first thing that pops into your mind is ‘What shall i cook for them?’.And after you are done with the cooking,you cross your fingers in the hope that it has come out just like you expected.When you go in for a taste and if it turns out to be delicious,the joy and happiness you experience at that time can be understood only by you.The happiness doubles when other people taste your food and compliment it.Your happiness at that time cannot be expressed in words.I am sure everyone who has cooked at least once would have experienced this joy.
Another way of expressing your love through food is cooking it with love.Cooking with love,affection and kindness is bound to overcome all the bad memories which were haunting you at that time.In the past 5 years,a new trend has evolved.Any guess as to what I mean by trend?I am mentioning about the fact that cooking has been made into a number of shows on tv.Not only are cooking shows popular but also reality competitions were contestants have to battle it out to win the title by cooking good food.There are many shows which do that but my personal favourite is ‘Masterchef Australlia’.My favourite cookery show is Rachel Allen:Bake which is telecasted on TLC.
Now I would like to share one of my fav recipies from the cuisines I mentioned as my fav.
PANEER BUTTER MASALA:
Ingredients:
250 gms Paneer (or Tofu), cut into 1-inch cubes
2 medium Onions, finely chopped
1½ teaspoons chopped Ginger
3-4 Garlic Cloves
3 medium Tomatoes
6-8 Cashew Nuts, soaked in water for 15 minutes
1 small piece of Bay Leaf
2 Green Chillies, slit lengthwise
1/2 cup Milk
2 teaspoons Kasuri Methi (dry fenugreek leaves)
1/2 teaspoon Garam Masala Powder
1 tablespoon Coriander Powder
1 teaspoon or to taste Red Chili Powder
2 tablespoons Fresh Cream
2 tablespoons Butter
2 tablespoons Oil
Salt to taste
Directions:
1. If you are using frozen paneer cubes, then defrost them.
2. Grind onion, ginger and garlic in a grinder and make a onion paste. Grind soaked cashew nuts with 2 tablespoons water to make a cashew nut paste. Blanch the tomatoes (put them in hot boiling water for 8-10 minutes and cover with a lid, drain and rinse them in normal cold water and remove skin) and blend them to prepare a tomato puree.
3. Heat cooking oil and butter in a non-stick frying pan over medium flame. Add onion paste and bay leaf and sauté until onion paste turns light brown for approx. 4-5 minutes.
4. Add green chilli and red chili powder and sauté for 30-40 seconds. Add cashew nut paste.
5. Stir and cook for 2-minutes.
6. Add tomato puree and cook for 3-4 minutes or until oil starts to separate from the puree.
7. Add coriander powder and garam masala powder and mix well.
8. Add 1/2 cup milk, 1/2 cup water and salt; mix and cook until oil comes on the surface or for approx. 4-5 minutes.
9. Add paneer cubes, kasuri methi and cook for approx 2-minutes or until you get the desired consistency of gravy.
10. Add fresh cream.
11. Mix properly and turn off the flame.
12.Transfer prepared curry to a serving bowl. Garnish Punjabi paneer butter masala with milk cream or cube of butter and serve.
